The grapes are hand harvested and temperature controlled, the fermentation is spontaneous without added yeast. the wine is aged in steel tanks to keep all the freshness of the fruit. Pale yellow color nuanced with hints of green, brilliant. Subtle nose, hints of citrus, white pepper. The mouth is nervous, the palate is tight. The finish is marked by a sensation of salivating flavor, enhanced by very discreet bitters. The whole gives off a feeling of maturity and energy
