Tasting Notes 1: Our Sandpiper Diamond Cuvee has enticing apple, pear and peach aromas, together with a light floweriness. This has a light to medium body and a lovely, creamy, smooth finish. A great pre-dinner drink, excellent for celebrations and parties – and great with shellfish and seafood. Limoux is a small town and appellation in the eastern Pyrenean foothills. This sparkling wine is made with an unusual local grape called Mauzac, blended with a good dose of Chardonnay. The wine spends at least 9 months on its lees to develop wonderful toasty overtones.
