Ben views the MKIII Sauvignon Blanc as “designed to disrupt conventional thinking. The MKIII is all about line, texture, secondary nuances”. A rich, ripe-smelling bouquet of dried fig and stone-fruit, some tarragon and chalky mineral notes in the background, while the palate is rounded and complex with coriander seed and lime zest. Crisp, tense and youthful on the palate with flavours of citrus then apple, mineral then herb, tropical then spice. Lengthy salivating finish. 10 months in old French barrels and puncheons. All grapes are hand harvested and whole bunch pressed with wild fermentation.
