Immediately impresses with a bright and clean nose full of fresh fruit - green apple and white peaches that are confirmed on the palate. The acidity is present but builds. The finish is well balanced.
Pure Chardonnay grapes, sourced from different plots that cover a little over 3 ha throughout Petit Chablis. The 68-year-old vines are planted in clay-limestone soils.
Each plot is harvested separately, according to maturity. The wine undergoes a light static settling. This keeps enough of the fine lees so that the alcoholic and malolactic fermentations occur naturally. The wine is aged in stainless steel to preserve the wine's freshness and character.
