CELLAR INFORMATION Grape bunches and berries being small and stems thin and fragile, this perfectly lends itself to 100% whole bunch fermentations. Easy extractions with two punch-downs daily results in an elegant structure but still with gripping tannin. Matured in old seasoned oak barrels for 11 months and bottled without fining and only a light filtration. VINEYARD INFORMATION Shiraz became one of the most important varieties of the Swartland, thriving in the conditions and reflecting the different terroirs perfectly. This vineyard is planted on deep sandy granite soils with sections of decomposing rock. Cool shady mornings and warm afternoon sun concentrates flavours without dehydration being problematic. The wine reflects this site perfectly being more elegant in style.
