This is an organic and biodynamic blend of Pinot Gris and Riesling grapes, fermented on their skins in small clay amphorae for 24 days, and bottled without stabilisation, fining or filtration It has a beautiful pale amber colour, and appealing and very complex aromas of rosehips, quince, crab apple jelly, rose petals and a hint of cider The palate is savoury, subtle and every bit as complex as the nose: verbena, green tea, powdered ginger, moscatel and preserved lemon rind It is dry and fairly low in alcohol, with a soft but definite tannin texture This really is superb - interesting, quirky and extremely enjoyable
