Bursts of cantaloupe, lemon and lime are veiled with salty, chalky mineral tones in this fresh-fruited, juicy blanc de blancs. Ripe, fleshy fruit is structured by steely, taut acidity and piercing effervescence. The lingering finish is delicately smoky
The vinification follows the classic method. The grapes are pressed immediately upon arrival in the cellar. Alcoholic fermentation is carried out in temperature-controlled stainless steel tanks at 18掳. The second fermentation is in the bottle with a maturation of at least 18 months on the lees.
