Da Sul stems from the finest white, calcareous, full south-facing vineyard at Noche, close to Vinchio, which Paolo first made, single-handed, in 1999 (hence the name, which means ‘alone’). Picked on the 1st October, the Da Sul vineyard is blessed also with 80-year-old vines, giving a rich but finely balanced wine. The calcareous element imbues the wine with natural freshness and poise, plus the ability to develop for up to 15 years from the harvest. David Berry Green
