The 2015 Zambartas rosé is made from 85% Lefkada and 15% Cabernet-Franc, harvested from high altitude vigorous bush vines. Cold maceration of the crushed grapes takes place for 3-4 days at 8 - 10°C. The Lefkada juice at this stage has a rather interesting blue hue. The skins are then removed (with very little of the pressings being added), and fermented cold (at c.14°C). The Cabernet Franc contributes the slightly sappy aroma whereas the Lefkada is mainly responsible for the food-friendly tannic grip and intense red berried bouquet and flavour.
