Since 1928, this solera has been regularly refreshed with the wine of white Grenache grapes, which tend to be picked only after they’ve shrivelled beneath Maury’s unforgiving sun. The wine is kept ageing in the roof space of the co-op in over 100-year-old demi-muids, most have needed repair due to leakage at some stage. Cask No. 753 is an unusual blend, as it is made up of white grapes with more floral and candied peel aromatics that support the subtle coffee bean, dark chocolate and hazelnut flavours.
